By minimizing skin contact during maceration, a very pale free-run must is obtained, almost colorless yet retaining intensely fruity varietal aromas and remarkable freshness on the palate. The subsequent winemaking follows the same careful process used for white wines—controlled low temperatures and protection from oxidation—resulting in a truly distinctive wine.
